Quinoa Salad Recipe

When I started blogging almost a year ago, this recipe was one of the first things I wanted to post!! I have no clue why has taken me so long to actually post it!! My husband and I absolutely loveee this recipe! It's healthy and super tasty. And the great thing is you can add other ingredients to make it your own, it's a super flexible recipe!!



Step 1: Fill your container 1/2 full of spinach! Use fresh spinach for better taste!

Step 2: Slice the cherry tomatoes in half. I use the whole container, like I said, this recipe is sooo flexible. Add as much or as little of each ingredient! 


Step 3: Toss the cut cherry tomatoes in with the spinach.

Step 4: After cooking quinoa, add about 2 cups of cooked quinoa into the mix (when cooking the quinoa, it's two cups quinoa and 4 cups water) here is how to cook quinoa

Step 5: Add about 3 tablespoons of dressing and 2 tablespoons of lemon juice. Suggestion: start with 2 tablespoons of dressing and 1 of lemon juice - shake it all up- then taste. My favorite way to make this recipe is based on taste, and everyone prefers different dressing levels! 

Final step: Shake it up!!! To mix my quinoa salad I put the lid on the tupperware and shake shake shake! It's a good arm workout lol.

Feel free to top it with other fresh veggies! Here is an example pictured below. I topped it with 1/2 avocado, sliced roma tomatoes and a few cut baby bell peppers!
