BANANA/COCONUT PROTEIN CAKE

I love eating cake !!! PROTEIN CAKE to be exact!!!! With banana and coconut flakes !!! Super simple to make ! I love these so much for on the go! I will make them, then let them cool down, put a slice in a zip lock baggie and GO! It is delicious hot or cold! 

  • 2 scoops vanilla Quest Vanilla protein powder
  • 2 eggs
  • 1 banana
  • 4 packets of Stevia zero calorie sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup of oats
  • 1 teaspoon baking soda
  • a handful of coconut flakes (optional)
  • 1/3 cup almond milk

Blend ( I used my nutribullet) ! Bake at 350 degrees for 20 minutes !  I baked it in an 8x8 pyrex. 

Optional: I always top it with a bit of brown sugar ! .

This makes about 4 servings ! Enjoy !
