BANANA/COCONUT PROTEIN CAKE

I love eating cake !!! PROTEIN CAKE to be exact!!!! With banana and coconut flakes !!! Super simple to make ! I love these so much for on the go! I will make them, then let them cool down, put a slice in a zip lock baggie and GO! It is delicious hot or cold! 

  • 2 scoops vanilla Quest Vanilla protein powder
  • 2 eggs
  • 1 banana
  • 4 packets of Stevia zero calorie sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup of oats
  • 1 teaspoon baking soda
  • a handful of coconut flakes (optional)
  • 1/3 cup almond milk

Blend ( I used my nutribullet) ! Bake at 350 degrees for 20 minutes !  I baked it in an 8x8 pyrex. 

Optional: I always top it with a bit of brown sugar ! .

This makes about 4 servings ! Enjoy !

Cinnamon Vanilla Oatmeal Breakfast Bars Recipe     (made with Quest Vanilla Protein Powder)

I am not sure if you have heard of the health brand Quest yet? But they are my absolute FAVORITE!!!!! Their protein bars are soooo addicting! Which I typically do not like protein bars, I find them to taste "chalky"... but not these ones. They are yummy! They recently came out with their PROTEIN POWDER, which is awesome too!! I love to bake and cook with this protein powder, I find its consistency perfect for that. 

Here is a recipe I threw together and I LOVED IT!!! I love experimenting with health foods like this... you never know when things will turn out good or not. This one was a winner! 

Ingredients:

2 scoops Vanilla Quest Protein Powder

1 tablespoon cinnamon

1/2 cup oatmeal/ whole grain oats

1 teaspoon vanilla extract

1 teaspoon baking powder

4 packets of Truvia calorie free sweetener

1 cup unsweetened almond milk ( sweetened would probably taste good too)

*Blend everything in a blender. I used my nutri bullet. 

*Spread in baking dish. I used an 8x8 PYREX baking dish.

Bake at 350 degrees for about 20 minutes or until golden brown on top and raised

Optional: Drizzle honey on top, or top with a bit of jam.

Makes 6 bars. They are quite filling. I will eat 2 or 3 for breakfast. 

I love that they are not TOO sweet. They are just right in my opinion.

90 DAY HEALTH CHALLENGE

I am SO nervous for this ... but it's a nervous and excited feeling!!! I will be doing a 90 day health challenge for myself. It includes WORKING OUT EVERYDAY... and NO LIQUOR ... YES, NO WINE!

I have not worked out EVERYDAY for 90 days... EVER! But I am absolutely up for the challenge! I recently got a 24 hour fitness membership and am loving their fitness classes, so I think that will make it a bit easier to work out everyday. 

Ever since Italy, I have gotten into a lovely routine of drinking a LOT of wine... So this no liquor thing will be a tad difficult, but I know it will cut a ton of sugar and calories from my diet. And will eliminate fat from the midsection! 

I intend on blogging about this challenge and my journey! I hope this inspires people to have a healthier 2015. Blogging about it will also hold me accountable. I can't quit when I have readers I committed to!!!! Start date is January 2nd!! End date is April 2nd! I will of course stay in the habit of working out and drinking less after April 2nd... but 90 days of pure commitment will get me on track! Ahhhh! SCARED AND EXCITED
